YOUR POSITION
This role reports to the Sous Chef and Executive Chef and follows the vacation schedule for relief.
WHAT YOU NEED TO DO
- Prepare food and supervise food preparation according to standard recipes and menu cycles, following Uniworld and HACCP cleanliness and hygiene procedures.
- Organize your work and manage your time according to daily program schedules and events.
- Supervise your team while ensuring attendance compliance with work schedules.
- Prepare and/or supervise show plates for service in coordination with the Sous Chef.
- Maintain the cleanliness of your work area and adhere to scheduled cleaning guidelines.
- Be punctual and ensure everything is ready for a successful service and smooth operation.
- Store culinary supplies and equipment according to procedures (e.g., FIFO, labeling, temperature control) and assist in stock inventories.
- Minimize food waste and overproduction, pushing food items in a timely manner and reporting to the Sous Chef or Executive Chef.
- Handle culinary supplies and maintain equipment according to guidelines.
- Report any defective materials, equipment, or damage to the Front Desk and Executive Chef. Assist in loading supplies for the ship and distribution of luggage if scheduled.
- Address special requests and complaints immediately, reporting them to the Executive Chef.
- Participate in preparing the ship at the end of the season for the start of the new season.
- Contribute to meetings and daily briefings.
- Implement the “Up serve” approach to enhance the cruise experience for guests while positively impacting onboard profit targets set by GRC.
- Comply with maximum working hours per day/week/month as stipulated by law and GRC, ensuring accurate record-keeping.
- Engage in any assigned learning activities, training, and safety and emergency drills.
WHAT YOU NEED TO KNOW
- Luxury culinary skills developed in four and five-star operations within hotels and/or ships.
- Culinary school accreditation.
- Knowledge of best practices and trends in the culinary industry.
- Eye for elegant and attractive food presentation, with the right temperature, texture, and excellent taste.
- Proficiency in the English language.
