YOUR POSITION

This position reports to the Sous Chef and Executive Chef and follows the vacation schedule for relief.

WHAT YOU NEED TO DO

  • Prepare food and supervise food preparation according to standard recipes and menu cycles, adhering to Uniworld and HACCP cleanliness and hygiene procedures.
  • Organize your work and manage your time according to daily program times, events, and assigned schedules.
  • Supervise team members regarding their clocking in and off duty as per work schedules.
  • Prepare and/or supervise show plates for service in agreement with the Sous Chef.
  • Ensure the cleanliness of your working area and adhere to any scheduled cleaning guidelines.
  • Be punctual and have everything ready for successful service and smooth operations with the rest of the team.
  • Store culinary supplies and equipment according to procedures (e.g., FIFO, labeling, temperature control) and assist in stock inventories.
  • Minimize food waste and overproduction; push food items on time and report to the Sous Chef or Executive Chef.
  • Handle culinary supplies and maintain equipment according to guidelines.
  • Report all defective materials, equipment, and premises damage to the Front Desk and Executive Chef. Participate in loading supplies for the ship and luggage distribution as scheduled.
  • Address special requests and complaints immediately to the Executive Chef.
  • Contribute to preparing the ship at the end of the season for the start of the next season.
  • Participate in meetings and daily briefings actively.
  • Practice the “Upserve” approach to enhance the cruise experience for guests and positively impact onboard profit targets set by GRC.
  • Comply with the maximum working hours per day/week/month as mandated by law and announced by GRC, ensuring accurate records are maintained.
  • Engage in any assigned learning activities, training, and safety or emergency drills.

WHAT YOU NEED TO KNOW

  • Luxury culinary skills gained in four and five-star operations in hotels and/or on ships.
  • Culinary school accreditation.
  • Awareness of best practices and trends in the culinary industry.
  • Skill in creating elegant and attractive food presentations, ensuring appropriate temperature and texture, and achieving excellent taste.
  • Proficiency in the English language.
