Chef de Partie Overview

The Chef de Partie plays a pivotal role in the kitchen, overseeing various aspects of culinary operations, including menu planning, production, mise en place, preparation, inventory management, and hygiene. They possess the necessary skills to carry out their responsibilities in the absence of the head chef.

Key Responsibilities

  • Delegate tasks to the saucier and other kitchen staff as needed.
  • Conduct daily checks on production, mise en place at each station, and preparation and plating of dishes.
  • Verify the quality of each dish and take appropriate action when necessary.
  • Act in the best interests of the establishment, particularly regarding purchasing supplies only when absolutely necessary.
  • Report any malfunctions or maintenance needs to the head chef or assistant chef.

Cleanliness and Hygiene

The Chef de Partie shares responsibility for maintaining cleanliness and hygiene, including the staff, equipment, refrigerators, and storage areas.

Personnel Management

They play an essential role in providing accurate and complete information to their supervisor and relaying instructions to their staff. In collaboration with the head chef, they organize and oversee the apprentice training program, ensuring that apprentice chefs receive exceptional training.

Management Participation

As a representative of the head chef, the Chef de Partie participates in management meetings to discuss kitchen operations and improvements.

Daily Operations

  • Prepare daily menus, including cold and hot appetizers and salad buffets.
  • Oversee mise en place for the breakfast buffet and discuss daily menus, banquets, and events with the entire team.
  • Prepare staff meals and manage lunch and dinner service, including half board and à la carte dining.
  • Check mise en place in the garde manger.
  • Create mise en place for à la carte menus served in various locations, including the terrace, lobby, bar, restaurant, and dining room.
  • Prepare aperitifs and assemble amuse-bouches.
  • Supervise and assist others as needed.
  • Order supplies from the head chef in advance.
  • Check supplies, monitor refrigerator temperatures, expiration dates, label, and store goods appropriately.
