Job Description: Chef de Partie
The Chef de Partie plays a critical role in the kitchen, responsible for a range of tasks essential to delivering high-quality culinary experiences. This position demands a range of skills in menu planning, production, mise en place, preparation, inventory management, and hygiene standards.
Key Responsibilities
- Menu planning and production
- Preparation and mise en place for daily services
- Conducting daily checks on production and quality of dishes
- Performing necessary kitchen tasks in the absence of the head chef
- Reporting malfunctions and maintenance needs promptly to the head chef or assistant chef
- Maintaining cleanliness and hygiene across all kitchen areas, including staff, equipment, and storage
- Providing accurate information to supervisors and effectively communicating instructions to kitchen staff
- Assisting in organizing the apprentice training program to ensure exceptional education for apprentice chefs
- Participating in management meetings as the head chef's representative
- Preparing daily menus including cold and hot appetizers, as well as salad buffets
- Overseeing mise en place for breakfast and lunch buffets
- Collaborating with the team to discuss daily menus, banquets, and events
- Preparing staff meals for various dining services, including lunch and dinner
- Checking mise en place in the garde manger
- Creating mise en place for the à la carte menu across different dining areas
- Preparing aperitifs and assembling amuse-bouches
- Supervising and assisting other team members as needed
- Ordering supplies as needed and ensuring all supplies are checked for safety and quality
