Job Description: Chef de Partie
The Chef de Partie plays a critical role in our kitchen, overseeing menu planning, preparation, and maintaining excellent hygiene standards. This position requires a dedicated individual who can ensure that all operations run smoothly, even in the absence of the Head Chef.
Key Responsibilities
- Conduct daily checks regarding production and mise en place at each station.
- Ensure the quality of each dish through careful preparation and plating.
- Act in the best interests of the establishment, with a focus on necessary supply purchases only in the Head Chef's absence.
- Report all malfunctions and maintenance needs to the Head Chef or Assistant Chef.
- Share responsibility for the cleanliness and hygiene of the kitchen staff, equipment, refrigerators, and storage areas.
- Provide accurate and complete information to supervisors and effectively relay instructions to staff.
- Organize and oversee the apprentice training program in collaboration with the Head Chef, ensuring high-quality training for apprentice chefs.
- Represent the Head Chef in management meetings.
Culinary Responsibilities
- Prepare daily menus, including cold and hot appetizers and salad buffets.
- Coordinate mise en place for breakfast and lunch buffets.
- Discuss daily menus, banquets, and events collaboratively with the entire team.
- Prepare staff meals efficiently.
- Manage lunch and dinner service across various dining areas: restaurant, bar, lobby, terrace, and dining room.
- Check mise en place in the garde manger to ensure readiness.
- Create mise en place for the à la carte menu across different dining locations, as well as for banquets and special events (including sandwiches and canapés).
- Prepare aperitifs and assemble amuse-bouches.
- Supervise and assist team members as needed.
- Order supplies from the Head Chef the day prior.
- Conduct inspections of supplies, checking refrigerator temperatures, expiration dates, labeling, and storage protocols.
