Job Description: Station Management

As a key member of our culinary team, you will be responsible for preparing, cooking, and presenting dishes that meet our restaurant's high standards. Your role will require full control and organization of your assigned station, ensuring all preparations are completed with excellence and punctuality.

Key Responsibilities

  • Prepare, cook, and present dishes according to the restaurant’s established standards.
  • Maintain complete organization of your assigned station, ensuring efficiency.
  • Ensure mise-en-place is performed to a high standard and is ready in time for service.
  • Communicate effectively with the sous chef and head chef regarding the needs of your station.

Quality & Consistency

Upholding the quality and consistency of each dish is essential in this role. You will be expected to:

  • Follow recipes, specifications, and plating guidelines with precision.
  • Ensure every dish meets the quality expectations of our restaurant before it leaves the pass.
  • Taste dishes regularly and make necessary adjustments to seasoning and technique.

Hygiene & Safety

Adhering to hygiene and safety standards is critical in the kitchen environment. Responsibilities include:

  • Maintaining high standards of cleanliness and organization in line with HACCP compliance.
  • Ensuring proper storage, labeling, and rotation of all ingredients using FIFO methods.
  • Respecting health and safety standards at all times.

Teamwork & Communication

Your ability to work collaboratively is vital for a harmonious kitchen environment. This includes:

  • Working alongside the kitchen team and providing support to colleagues when needed.
  • Communicating clearly during service while remaining calm under pressure.
  • Training and guiding commis chefs or stagiaires who are working at your station.

Operational Efficiency

To ensure the kitchen operates smoothly, you will also be tasked with:

  • Monitoring stock levels for your section and communicating any shortages in advance.
  • Reducing waste and contributing to effective cost control.
  • Assisting in the development of new dishes or improvements when requested by the head chef.
