Position Overview

The Food and Beverage Manager is responsible for managing all food and beverage outlets, including lounges, bars, restaurants (up to 3 areas), and special events, in collaboration with the Executive Chef. Given the size and operations of our vessels, the Food and Beverage Manager must be hands-on during peak service times, such as focusing on wine and spirits sales during dinner, and assisting with duties that are not directly related to the department, such as loading supplies and guest accommodations. A primary focus will be on delivering exceptional customer service and addressing any customer service issues onboard, in accordance with the Viking China Outbound Standards (VRC PSO).

Assignments/Responsibilities

  • Supervise and support a professional, welcoming, and sales-oriented F&B service.
  • Coordinate with the Executive Chef regarding dietary needs for guests according to the manifest.
  • Ensure absolute cleanliness and order in accordance with HACCP regulations.
  • Operate service procedures according to established standards (e.g., menus, décor).
  • Organize and execute F&B related ship functions and special events.
  • Responsible for sales of onboard products, including aperitifs, digestifs, and wines.
  • Prepare for the opening and closing of the ship at the beginning and end of the season.
  • Serve as Deputy Hotel Manager in the absence of the Hotel Manager and Assistant Hotel Manager.
  • Organize, manage, and motivate restaurant and bar staff (7-16 crew members).
  • Manage work schedules and train service department team members.
  • Handle luggage duty on embarkation and disembarkation days.
  • Participate in loadings and waste management.
  • Control costs, including inventory management in line with budget standards.
  • Handle daily cash register closing procedures for the restaurant and bar areas.
  • Welcome guests and engage with them during meal times.
  • Conduct daily menu presentations in coordination with the Executive Chef.

Duties

  • The holder of the position must not disclose company information, manuals, business developments, or EDP data to any third party, nor retain such information for personal use after leaving the position.
  • The company reserves the right to seek compensation for damages incurred due to a breach of this requirement and may pursue legal action against the employee.
  • Conduct and appearance must align with the rules and regulations of Viking China Outbound.

Qualification Profile

  • Degree in hotel or catering industry.
  • Minimum of 3 years professional experience in a similar position within a 4 or 5-star operation.
  • International experience or experience in the cruise or luxury hotel industry is advantageous.
  • Excellent Mandarin and proficient English skills; other languages are a plus.
  • Service-oriented with a strong guest-focused approach.
  • Exceptional management, organizational, and communication skills.
  • Flexible, able to work under stress, a team player, committed, and possesses a positive personality.
  • Professional appearance is required.
