Join a renowned Indian restaurant chain launching its first location in Switzerland. We are seeking a talented Executive Sous Chef or Chef De Cuisine to lead our kitchen team while personally preparing exquisite Indian dishes that meet our guests’ specifications.
Job Description
The successful candidate will be accountable for the quality, consistency, and production in the restaurant kitchen. Key responsibilities include:
- Exhibiting culinary talents by executing tasks while leading the kitchen staff and managing all food-related functions.
- Coordinating menus focused on vegetarian cuisine, including purchasing, staffing, and food preparation.
- Collaborating with the team to enhance guest and employee satisfaction while adhering to the operating budget.
- Ensuring sanitation and food safety standards are met.
- Developing and training the team to improve overall results.
Candidate Profile
We are looking for candidates with the following qualifications:
- High school diploma or GED; 10+ years of experience in Indian culinary arts, food and beverage, or a related professional area.
- A 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or a related discipline is preferred.
- Experience with South Indian cuisine is essential.
Core Work Activities
Your role will involve ensuring culinary standards and responsibilities are met for the restaurant. Key activities include:
- Supervising kitchen shift operations and ensuring compliance with all Food & Beverage policies, standards, and procedures.
- Maintaining food preparation handling and correct storage standards.
- Recognizing superior quality products, presentations, and flavors.
- Planning and managing food quantities and plating requirements for the restaurant.
- Communicating production needs to key personnel.
- Assisting in the development of daily and seasonal menu items.
- Estimating daily restaurant production needs.
- Preparing and cooking Indian foods, particularly focusing on Chat cuisine.
- Checking the quality of raw and cooked food products to ensure standards are met.
- Determining presentation styles and creating decorative food displays.
- Supervising and coordinating the activities of cooks and kitchen staff.
- Managing daily operations effectively.
- Understanding employee positions well enough to perform duties in their absence.
