Position: Executive Sous Chef / Chef De Cuisine

Join a prestigious Indian restaurant chain, establishing its first location in Switzerland. We are seeking a talented Executive Sous Chef / Chef De Cuisine to lead kitchen operations while preparing authentic Indian culinary delights.

Job Description

You will be accountable for the quality, consistency, and production of our restaurant kitchen. In this role, you will showcase your culinary talents, lead our skilled staff, and manage all food-related functions. Your responsibilities include:

  • Coordinating menus focusing on vegetarian cuisine, along with purchasing, staffing, and food preparation.
  • Collaborating with the team to enhance guest and employee satisfaction while adhering to the operating budget.
  • Ensuring sanitation and food standards are consistently met.
  • Developing and training team members to achieve improved results.

Candidate Profile

The ideal candidate should possess the following qualifications:

  • High school diploma or GED; 10+ years of experience in Indian culinary, food and beverage, or a related professional area.
  • A 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or a related field is preferred.
  • Experience with South Indian cuisine is a must.

Core Work Activities

You will be responsible for ensuring culinary standards and fulfilling the following core activities:

  • Supervising kitchen operations and ensuring compliance with all Food & Beverage policies, standards, and procedures.
  • Maintaining food preparation handling and correct storage standards.
  • Recognizing superior quality products, presentations, and flavors.
  • Planning and managing food quantities and plating requirements for the restaurant.
  • Communicating production needs to key personnel.
  • Assisting in the development of daily and seasonal menu items.
  • Estimating daily restaurant production needs and checking the quality of raw and cooked food products.
  • Determining food presentation and creating decorative food displays.
  • Leading and coordinating activities of cooks and kitchen staff.
  • Managing all day-to-day kitchen operations and understanding employee positions sufficiently to perform duties in their absence.
