Job Description
As the Executive Sous Chef, you will be accountable for maintaining the quality, consistency, and production standards of the restaurant kitchen. Your culinary talents will shine as you personally engage in cooking while leading the staff in all food-related functions.
Key Responsibilities
- Coordinate vegetarian menus, manage purchasing, staffing, and oversee food preparation.
- Work collaboratively with your team to enhance guest and employee satisfaction while adhering to the operating budget.
- Ensure compliance with sanitation and food safety standards.
- Develop and train your team to achieve improved results.
Candidate Profile
Education and Experience: A high school diploma or GED is required, along with 10+ years of experience in Indian culinary or related fields. A 2-year degree in Culinary Arts, Hotel and Restaurant Management, or a similar discipline is a plus. Experience with South Indian cuisine is essential.
Core Work Activities
- Ensure that culinary standards and responsibilities are met for the restaurant.
- Supervise daily kitchen operations and uphold all Food & Beverage policies, standards, and procedures.
- Maintain proper food preparation, handling, and storage standards.
- Recognize and promote superior quality products, presentations, and flavors.
- Plan and manage food quantities and plating requirements effectively.
- Communicate production needs to relevant personnel.
- Assist in developing seasonal and daily menu items.
- Prepare and cook Indian dishes, focusing on the Chat cuisine.
- Ensure the quality of raw and cooked food meets established standards.
- Design attractive food presentations and displays.
- Supervise and coordinate the activities of cooks and kitchen staff.
- Handle all day-to-day kitchen operations and understand employee roles to cover duties as needed.
