Job Description

We are seeking an experienced Executive Sous Chef / Chef De Cuisine to lead our kitchen team at a well-known Indian restaurant chain in its first location in Switzerland. In this role, you will be responsible for:

  • Ensuring the quality, consistency, and production of all kitchen operations.
  • Exhibiting culinary talents by personally preparing Indian food items while managing the staff.
  • Coordinating vegetarian menus, purchasing, staffing, and food preparation.
  • Improving guest and employee satisfaction while maintaining the operating budget.
  • Maintaining sanitation and food standards in compliance with all relevant policies.
  • Developing and training team members to enhance performance.

Candidate Profile

We require candidates to possess the following qualifications:

  • A high school diploma or GED; with 10+ years of experience in Indian culinary arts, food and beverage, or a related field.
  • A 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or a related major is preferred.
  • Experience with South Indian cuisine is essential.

Core Work Activities

Your responsibilities will include:

  • Ensuring culinary standards and responsibilities are met for the restaurant.
  • Supervising kitchen shift operations in compliance with Food & Beverage policies and standards.
  • Maintaining food preparation and storage standards.
  • Recognizing superior quality products, presentations, and flavors.
  • Planning and managing food quantities and plating requirements.
  • Communicating production needs to key personnel.
  • Assisting in developing daily and seasonal menu items.
  • Estimating daily restaurant production needs.
  • Preparing and cooking Indian foods focusing on Chat cuisine.
  • Checking the quality of raw and cooked food products to meet standards.
  • Determining presentation approaches and creating decorative food displays.
  • Leading and coordinating activities of cooks and kitchen workers.
  • Managing day-to-day operations effectively.
  • Understanding employee roles well enough to step in during their absence.
