Job Description

We are seeking an experienced Kitchen Operations Manager to ensure smooth and flawless operations across all kitchen areas within our hotel. This role involves overseeing various dining outlets and maintaining high standards of customer satisfaction and profitability.

Key Responsibilities

  • Oversee all kitchens in the hotel, including:
    • À la carte restaurants
    • Bars
    • In-room dining
    • Breakfast services
    • Banqueting and catering services
  • Achieve high guest satisfaction and profitability through optimal use of resources.
  • Implement hotel-specific quality standards and management requirements.
  • Ensure proper handling of machinery, fixtures, and equipment.
  • Ensure compliance with hygiene regulations.
  • Regularly inspect kitchens and storage areas.
  • Monitor production processes, methods, and conditions.
  • Maintain strict control over all food items issued to and from the kitchen.
  • Ensure that all orders are prepared according to specifications.
  • Minimize food waste through proper portioning and production control.
  • Create menus, including costing and calculations.
  • Maintain food cost percentages within budget.
  • Coordinate maintenance of kitchen equipment with the Facility Manager.
  • Ensure kitchen cleanliness in coordination with the Chef Steward.
