Job Overview

The Executive Chef is responsible for overseeing every aspect of food service operations while supporting and mentoring all kitchen staff. You will ensure that the kitchen and food adhere to Hazard Analysis Critical Control Points (HACCP) standards and operate in alignment with Viking China's service standards, budgets, and recipes.

Key Responsibilities

  • Oversee the entire galley operation onboard.
  • Ensure the professional production and distribution of all meals for guests and crew in accordance with company standards, menu cycle, and recipes.
  • Organize and execute food and beverage-related ship functions and special events (e.g., Welcome / Farewell).
  • Maintain food safety and the highest levels of cleanliness in the galley and production areas at all times in compliance with Viking River Cruise standards and HACCP guidelines.
  • Order all food supplies based on production planning, in cooperation with the Hotel Manager.
  • Conduct menu briefings with the wait staff prior to service and instruct them on how to explain dishes to guests.
  • Prepare for the opening and closing of the ship at the beginning and end of the season.
  • Supervise, motivate, and train a multi-national galley crew.
  • Participate in loading and quality control measures.
  • Control costs and ensure adherence to budgetary guidelines.
  • Conduct inventory according to company procedures.
  • Actively participate in ship functions, socializing with guests during meal times.

Qualification Profile

  • Completed apprenticeship as a cook.
  • Minimum of 4 years of professional experience in a 4 or 5-star hotel or restaurant; cruise industry experience is a plus.
  • Extensive knowledge of Asian/Chinese cuisine and Western dishes.
  • Excellent Mandarin and English language skills; proficiency in other languages is a plus.
  • Strong management, organizational, and communication skills.
  • Experience in all aspects of international cooking, HACCP rules, and standards.
  • Service-oriented with a guest-focused approach.
  • Flexibility, stress resistance, teamwork skills, commitment, positive attitude, and a professional appearance.
