Job Description: Sous Chef

The sous chef plays a vital role in a culinary establishment, equipped with the necessary skills to perform their duties effectively, particularly in the absence of the head chef. This position involves a blend of culinary creativity and managerial oversight, ensuring the smooth operation of the kitchen.

Key Responsibilities

  • Collaborate with the head chef in creating the weekly menu, overseeing its production, mise en place, and overall preparation.
  • Conduct daily checks pertaining to:
    • Production
    • Mise en place at each station
    • Preparation and plating
    • Quality verification of each dish, taking appropriate action as needed
  • Act in the best interests of the establishment when making purchasing decisions, ensuring only necessary supplies are acquired in the absence of the head chef.
  • Ensure the accuracy and completeness of inventory, contributing to optimal kitchen profitability.
  • Share responsibility for the maintenance, cleanliness, and proper operation of kitchen equipment, reporting any issues to the head chef or assistant chef.
  • Maintain high standards of cleanliness and hygiene for staff, equipment, refrigerators, and storage areas.
  • Provide accurate information to supervisors and relay instructions to staff, supporting the organization of the apprentice training program in collaboration with the head chef.
  • Represent the head chef in management meetings.

Daily Tasks

  • Prepare daily menus, including hot and cold appetizers and salad buffets.
  • Mise en place for breakfast buffet.
  • Discuss daily menus, banquets, and events with the entire team.
  • Prepare staff meals.
  • Oversee lunch service across various dining areas (restaurant, bar, lobby, terrace, dining room).
  • Supervise dinner service, including half board and à la carte options.
  • Check mise en place in the garde manger.
  • Create mise en place for à la carte menus for various dining scenarios.
  • Prepare aperitifs and assemble amuse-bouches.
  • Supervise and assist other kitchen staff as needed.
  • Order supplies from the head chef the day prior.
  • Perform checks on supplies, including refrigerator temperatures and expiration dates. Ensure proper labeling and storage.

Additional Responsibilities

  • Monitor refrigerator temperatures.
  • Maintain cleanliness throughout the kitchen.
  • Regularly clean all refrigeration units.
  • Ensure daily cleaning of your workspace (following hygiene protocols).
  • Carry out detailed tasks as outlined in your job description.
